Poached egg and smashed avo

Ingredients:
1 egg
white vinegar
1 slice of rye bread, toasted
10 almonds
Half an avocado
Heaped dessert spoon of cottage cheese
Juice of 1 lemon

Method:
Roughly chop up almonds

In a small bowl add avocado, cottage cheese, lemon juice and chopped almonds and mash with the back of a fork

Add a splash of white vinegar to saucepan of simmering water. Crack egg straight into saucepan and leave for about 2 minutes or until yolk is as desired. Pile up the avocado mix on toast and chuck the poached egg on top.
