Rice Paper Rolls

1 carrot
1 cucumber
1 red capsicum
1 pack of chicken tenderloins
Rice paper rolls

Grate or julienne carrot and cucumber and slice up capsicum

Cook up tenderloins and tear into small pieces

Dip rice paper rolls in warm water until slimy and soft

Assemble ingredients in the middle of the rice paper sheet

Wrap up according to the instructions on the back of the rice paper rolls packet

If you like it a little more Asian style then add fresh coriander leaves before wrapping up. I’m not a fan of coriander but that’s how my mum makes hers. Also if you’re making these for your partner as well or you’re feeling a little naughty, definitely break out the sweet chilli dipping sauce.
