Veggie Burgers with Mint Yoghurt

Ingredients:
1 egg
1 cup oat bran
3 small carrots
1 zucchini
1/2 green capsicum
1/2 onion
[Optional]
Garlic
Mixed Herbs

Method:
Grate carrots and zucchini and dice onion and capsicum
Whisk egg in a large bowl
Add all ingredients into bowl and mix
Use hands to make into desired sized burgers
If too wet, add more oat bran. If too dry, add another egg
Cook in frying pan on low heat until golden on each side

For mint yoghurt, add some mint (fresh, frozen or dried) to some full fat Greek yoghurt
