Clean Mini Chicken Parma

6 ryvita crackers
1 egg
6 chicken tenderloins
2 tomatoes
pinch of salt
ham off the bone
cottage cheese
mixed herbs

Preheat oven to 175oC
Put ryvitas in a plastic bag and whack with a rolling pin until resembles bread crumbs
Whisk egg in a shallow bowl
Coat chicken tenders in egg and then crushed ryvitas
Cook in frying pan with olive oil until slightly browned
Roughly chop tomatoes and place in saucepan with some olive oil
Add salt and simmer until thick and saucy
Place chicken on oven tray and spread tomatoes evenly over the top
Place ham on each tenderloin and top with cottage cheese and mixed herbs
Bake until cottage cheese has browned and serve with steamed veggies
