Peanut Butter Cookies


1 cup almond meal
1 cup pitted dates
1/2 cup natural peanut butter*
Vanilla to taste


If you have a food processor just chuck everything in and blend until it resembles crumbly dough

If you don’t (like me) just blend everything as much as you can with a stick blender and then finish of by mixing the rest through with your hands

Once you have your dough, roll into balls and press down with a fork
No baking required. Just store in the fridge.

*Any combination of nut butters will work


Clean Carrot Fritters

I really wanted to make zucchini fritters today so I found a Martha Stewart recipe that I decided to tweak and clean up. Only problem was… Mum forgot to buy zucchinis.

So I decided to try swapping the zucchinis for carrots and I think I’ve just stumbled upon something amazing.

2 carrots
Zest of 1 lemon
2 sprigs of spring onion
2 heaped tsp cottage cheese
1 tsp garlic
1/4 cup oats
2 eggs
1 tsp baking powder
salt to taste (optional)

Grate carrot, finely grate lemon zest and chop up spring onion
Whisk eggs in a large bowl
Add all ingredients except oats
Place oats in milkshake container and blend with stick blender until fine and powder-like

Add oats to mixture and stir well
Heat olive oil in frying pan on medium heat
Spoon desired amount into pan and cook until golden on one side
Turn heat to low, flip fritters and cook until golden on other side
Serve with lemon slices

No Bake Nutty Bites

These yummy nutty bites are great but don’t eat too many in one day. They’re full of nuts and nuts are meant to be kept to the portion size of three fingers.

1/4 cup macro almond spread
1/4 cup macro natural peanut butter (or 1/2 cup preferred nut butter)
1/3 cup honey
2 tsp vanilla essence
1 cup oats
1 cup dessicated coconut
1/4 cup macadamias, smashed
1/4 cup or less of dry ingredients of choice (I used few tbls poppy seeds, dash of cinnamon and a pinch of nutmeg)
1 tsp orange essence [optional] found in the supermarket with vanilla essence

In a large bowl mix nut butters, honey and vanilla. If difficult to combine, microwave until warm

Leave macadamias in packet and smash with a rolling pin until resembles bread crumbs

Add all other ingredients to bowl and combine
Take enough dough to make a ball and squeeze until easy to roll
After rolling into balls leave in the freezer to set and then store in the fridge
