Peanut Butter Cookies

Ingredients:
1 cup almond meal
1 cup pitted dates
1/2 cup natural peanut butter*
Vanilla to taste

Method:
If you have a food processor just chuck everything in and blend until it resembles crumbly dough

If you don’t (like me) just blend everything as much as you can with a stick blender and then finish of by mixing the rest through with your hands

Once you have your dough, roll into balls and press down with a fork
No baking required. Just store in the fridge.

*Any combination of nut butters will work

No Bake Nutty Bites

These yummy nutty bites are great but don’t eat too many in one day. They’re full of nuts and nuts are meant to be kept to the portion size of three fingers.

Ingredients:
1/4 cup macro almond spread
1/4 cup macro natural peanut butter (or 1/2 cup preferred nut butter)
1/3 cup honey
2 tsp vanilla essence
1 cup oats
1 cup dessicated coconut
1/4 cup macadamias, smashed
1/4 cup or less of dry ingredients of choice (I used few tbls poppy seeds, dash of cinnamon and a pinch of nutmeg)
1 tsp orange essence [optional] found in the supermarket with vanilla essence

Method:
In a large bowl mix nut butters, honey and vanilla. If difficult to combine, microwave until warm

Leave macadamias in packet and smash with a rolling pin until resembles bread crumbs

Add all other ingredients to bowl and combine
Take enough dough to make a ball and squeeze until easy to roll
After rolling into balls leave in the freezer to set and then store in the fridge
